A great Lentil recipe for us Achalasia folks!

Here is a great & tasty recipe for Lentil soup I saw on Foodnetwork. It was a "Good Eats" episode starring Alton Brown. Lentils are a great source of protien & gives us a good substitute for us meat & potatoe lovers. Enjoy & stay positive on those tough days!

Ingredients:

2 tablespoons of olive oil

1 cup of finely chopped onion

1/2 cup finely chopped carrot & celery

2 teaspoons kosher salt

1 lb lentil, cleaned & rinsed

1 cup peeled & chopped tomatoes (drained)* I used

Del Monte tomatoes with Basil, Garlic & oregano

2 quarts chicken or vegetable broth

1/2 teaspoon freshly ground coriander & cumin

Directions:

Place the olive oil into a large 6-quart Dutch oven and set over medium heat. Once hot, add onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander and cumin & stir to combine. Increase the heat to high and bring to a boil. reduce the heat to low, cover and cook at a low simmer until lentils are tender, approximately 35 to 40 minutes. using a stick blinder (commonly refered to as a hand blender), puree to your preferred consistency. Enjoy!
